Soup Series on LMFM's Late Lunch- Broccoli & Blue Cheese Soup
Mar 07, 2024To conclude our current Cooking segment on LMFM's Late Lunch, I have a really tasty Broccoli and Blue Cheese Soup. If you haven't tried this before, I promise you, it's a really incredibly delicious soup. This would be lovely as a lunch on a cold day after a bracing walk with some lovely homemade brown bread.
(Serves 4)
Ingredients
1 Onion, chopped
1 clove of Garlic, chopped
750g Broccoli, chopped into fluores
500ml chicken stock
100g Blue Cheese, crumbled
1 tblsp Rapeseed Oil
Knob of Butter
Salt & Pepper.
Method:
Heat the oil in a large pot and add the onion and a pinch of salt. Cover and sweat for five minutes until the onion softens. Add the garlic and pepper and cook through for a moment or two before adding the stock. When the stock is on a rolling boil add the broccoli. It's very important to ensure the stock is boiling before you add the broccoli so that it retains its vibrant green colour. Cook for a couple of minutes until the broccoli is tender. Add the blue cheese and whizz up using a stick blender.
